Recipe
Ingredients:
Beef- 1-2lbs of roast or stew beef or 1-2lbs of ground beef
64oz Vegetable juice
3lbs of Potatoes
1tsp Salt- you can add more to taste later
1 Tbsp dried Italian Seasoning
Directions
Brown the meat in a pot along.
Once the meat is browned, add in the 64oz of vegetable juice, potatoes and salt.
Let boil till potatoes are soft.
Add in herbs and boil for a further 10 min.
Add in more salt to taste and enjoy!!

Variations- This can easily be turned into a beef barley, or beef barley vegetable stew. Simply add the vegetables and barley where you would add the potatoes and boil.
If you want to keep the potatoes, I would suggest boiling the potatoes till tender but still a little firm before you add the barley and vegetables.
