Orange Vanilla Extract

Ingredients:

2 Orange peels

8 oz. of 40% abv Rum

8 oz. Vanilla Extract

Directions:

Peel the orange with a peeler and to only get the orange rind, not the white.

Soak in rum for 4-6 weeks in a dark place.

When peeling the orange try to not get the white part of the peel. A little white is not a problem but too much will turn your extract bitter before you get a nice orange flavor. I prefer to soak my orange peels for 4 weeks. It should have a nice orange aroma to it when it is done extracting. Strain the peels, and you have orange extract! Mix with vanilla extract at a 60/40 ratio of orange extract to vanilla extract. I find, my orange extract has a very strong aroma by itself but almost smells like candy orange when mixed with the vanilla.

I have never tried using dried orange peel for this, but will experiment with that in the future. The shelf life of this extract is upwards of 2 years or more. I prefer using it up within the year as it will start to lose its orange flavor. If any mold appears or the flavor changes from when you first made it, I would discard and make a new batch.

This extract is really nice in cookies, frosting, and whipped cream!! I also enjoy adding this to soda or homemade eggnog.
