Nutmeg Vanilla Extract

Ingredients:

6 whole nutmeg seeds-affiliate link

8oz. of 40% abv Rum

8oz. rum or vodka vanilla extract

Directions:

Crack the seeds into halves or quarters

Place the seeds into the alcohol and let sit in a dark cabinet for 4-6 weeks.

It is best to crack the nutmeg seeds as this gives more surface area for the alcohol to touch and a better infusion. I prefer using 6 seeds per cup of alcohol, although you can use more for a quicker infusion. Let it sit for 4 weeks, shaking every few days. At this point, you can start taste testing it, although I prefer to test it by smell. If it smells strongly of alcohol then it is not ready and you can let it sit longer. If it has been sitting for 6 weeks, I would strain it or it will start to get bitter. When you have the desired flavor or smell, strain the extract. This is nutmeg extract and can be used as any other extract!

I like doing a 50/50 mixture of nutmeg extract and vanilla extract. Mix them together and you have Nutmeg Vanilla Extract. The shelf life of this extract is around 4 years. I prefer to use it within 2 years for the best flavor. If you see any mold or the flavor has changed from when you first made it, I would discard and make a fresh extract.

How do you use it??

I prefer using this one in homemade eggnog or milk nog. We did put it into ice cream once but it didn’t do well once it was frozen. It also pairs well with the other spiced extracts and is delicious in pumpkin pie or pumpkin bars.
