I love this cake recipe. It started as a chocolate cake recipe from the great depression and I have adapted it to suit many different needs.

Ingredients:
1 1/2 cup flour
1 tsp Baking Soda
1/2 tsp salt
1 cup sugar
1 1/2 tsp vanilla- Read How to make Vanilla>
1 Tbsp white vinegar
1 cup water
Directions:
Preheat oven to 325 degrees.
Put flour, baking soda, salt, and sugar in a bowl and combine well.
Add water, vinegar, and vanilla to the dry ingredients and mix thoroughly.
Place in a greased 8×8 pan and bake for 40-45 min.
To make this a chocolate cake- Add 4 TBSP cocoa powder

Add 8 oz of apple preserves and 2 tsp cinnamon for an apple cake or 1 cup finely shredded apples plus 2 tsp cinnamon.
Add a cup of chocolate chips for a chocolate chip cake.
Allow the cake to cool for a few minutes, poke holes in the cake with a for. Pour over it a box of your favorite jello mix, prepared as the box instructs and cool. Once completely cool, spread whipped cream on top for jello cake.
My kids have requested an orange cake so that will be my next experiment with this recipe.
